To celebrate the launch of our new Luxurious Body Oils, we're sharing Rachel's easy-to-make Chia Seed Pudding recipe, which is a vegan and gluten-free treat packed with nutrients!  Chia seeds, naturally gluten and grain-free, produce a powerhouse oil that soothes and repairs the skin. To top it off, they are rich in calcium, omega-3s and antioxidants. (Wellness Mama)
 
This recipe keeps well in the fridge for two to three days, making it ideal to prepare in advance and grab quickly for a nutrient-packed snack, dessert, or decadent breakfast on those days when you just can't adult. 
 
Ingredients
 
1 1/2 cups (360 ml) almond milk, original flavor and unsweetened
1/3 cup (63 g) chia seeds
1/4 cup (24 g) Sun Potion Raw Cacao or unsweetened cocoa powder
2-5 tbsp (30-75 ml) maple syrup if not blending (can sub 5-9 dates, pitted, if blending)
1/2 tsp ground cinnamon (optional)
1/2 tsp ginger (optional)
1/2 tsp turmeric (optional)
1/4 tsp sea salt
 
Instructions

  • Add all ingredients except sweetener to a mixing bowl and whisk vigorously until fully combined. Sweeten to taste with maple syrup. If using a blender to combine, you can add maple syrup or use dates as sweetener and pulse/blend until completely smooth.
  • Cover in the fridge overnight or until the mixture has achieved a pudding-like consistency. Serve chilled with toppings, such as fruit, granola, or coconut whipped cream.
